BEEF WELLINGTON

  • 4 FILET MIGNON STEAKS, CUT 1 Ĺ-2 INCHES THICK (APPROXIMATELY 6-8OZ EACH)
  • DIMITRIíS GOURMET SEASONING
  • 1 POUND PATE DE FOIE GRAS
  • 1 PACKAGE PUFF PASTRY SHEETS, THAWED
  • 2-3 EGG WHITES FOR WASH

THE TRICK TO EXCELLENT BEEF WELLINGTON IS TO PREPARE THE STEAK THE NIGHT PRIOR TO YOUR ENGAGEMENT AND THE CHILLED FILLET WILL COOK PERFECTLY IN THE ENCASED PUFF PASTE

TRIM EXCESS FAT FROM MEAT. RINSE AND PAT DRY WITH PAPER TOWEL.

GENEROUSLY RUB OR SHAKE DIMITRIíS GOURMET SEASONING ON ALL SIDES.

SEAR STEAK ON HIGH FOR APPROXIMATELY 30 SECONDS PER SIDE. TURN HEAT TO

MEDIUM AND GRILL STEAK FOR ABOUT 7-8 MINUTES ON EACH SIDE. YOU WANT A RARE FILLET DUE TO THIS TWICE COOKED JOY. REFRIGERATE OVERNIGHT.

PREHEAT OVEN TO 425 DEGREES

ON A LIGHTLY FLOURED SURFACE ROLL OUT A SHEET OF THE PUFF PASTRY INTO A RECTANGLE ABOUT 1 Ĺ INCHES LARGER IN WIDTH AND LENGTH THAN THE FILLET.

SPREAD THE RECTANGLE WITH THE PATE DE FOIE GRAS.

CENTER THE FILLET ON THE ROLLED OUT PUFF PASTRY DOUGH AND WRAP ALL SIDES OF THE DOUGH AROUND THE FILLET, SHAPING IT OVER THE ENTIRE MEAT. CUT OFF EXCESS DOUGH AND SECURE TOP AND BOTTOM PIECES TOGETHER, FINGER PINCHING ALL AROUND THE DOUGH TO SECURE TIGHTLY.

BRUSH ALL SURFACES WITH THE EGG WASH AND PLACE UPRIGHT ON A GREASED BAKING SHEET. DECORATE THE TOP WITH THE EXCESS DOUGH SECURING WITH THE EGG WASH, CONTINUING TO BRUSH THE EGG WHITE ON THE TOP OF THE PASTRY.

BAKE 10 MINUTES @ 425 DEGREES. REDUCE HEAT TO 375 DEGREES AND CONTINUE BAKING UNTIL CRUST IS GOLDEN, ABOUT 20 MINUTES.

ALLOW TO STAND 5 MINUTES. GARNISH AND SERVE WITH YOUR FAVORITE BORDELAISE SAUCE, VEGETABLES, AND DIMITRIíS GOURMET POTATOES.

REMOVE MEAT FROM REFRIGERATOR ABOUT 30 MINUTES BEFORE GRILLING.

TRIM EXCESS FAT FROM MEAT. RINSE AND PAT DRY WITH PAPER TOWEL.

RUB OR GENEROUSLY SHAKE DIMITRIíS GOURMET SEASONING ON ALL SIDES.

SEAR STEAK ON HIGH FOR APPROXIMATELY 30 SECONDS ON EACH SIDE. TURN HEAT TO MEDIUM AND GRILL ABOUT 7-8 MINUTES ON EACH SIDE FOR RARE, ABOUT 10-12 MINUTES FOR MEDIUM RARE, AND 14-15 MINUTES FOR WELL DONE.

RINSE AND PAT DRY WITH PAPER TOWEL. RUB OR GENEROUSLY SHAKE

DIMITRIíS GOURMET SEASONING ON ALL SIDES OF TENDERLOIN.

SEAR TENDERLOIN ON GRILL ON HIGH FOR 1-2 MINUTES ON ALL SIDES. TURN HEAT TO MEDIUM AND GRILL ABOUT 40-50 MINUTES TURNING OFTEN. PORK SHOULD BE COOKED COMPLETELY. TEST WITH A MEAT THEROMETER TO READ 170 DEGREES.
